Brazilian Beans with Pineapple Salsa

A quick zingy salsa to top our smoky Brazilian Beans.
INGREDIENTS
  • Coconut Rice (Or any rice will do!)
  • 3 Brazilian Beans Blocks
  • ¼ Pineapple
  • ½ Red Pepper
  • ½ Red Onion
  • 1 Lime
  • Coriander
COOKING METHOD
  1. Dice up all the ingredients for your salsa and season with the lime juice, salt and pepper.
  2. Cook your rice according to the instructions on the pack. We used microwave Coconut Rice for speed!
  3. Heat up your Brazilian Beans Blocks until piping hot.
  4. Serve the Beans over the rice and top with your fresh salsa.
