Smoky Aubergine with Feta Egg

A banging brunch when you only have a few ingredients to hand!

INGREDIENTS
  • 2 Smoky Aubergine Blocks
  • 1 Slice of Sourdough
  • 1 Egg
  • Handful of Feta
  • Coriander
  • Handful of Seeds
COOKING METHOD
  1. Heat up your Smoky Aubergine Blocks until piping hot.
  2. Toast your sourdough.
  3. Add a drizzle of oil to a nonstick pan over a medium heat.
  4. Crumble your feta into a small circle in the pan and then crack in your egg.
  5. Fry the egg until the yolk is as desired, and the deta has gone crispy around the edge.
  6. Top the toast with the Smoky Aubergine, fried egg, seeds and chopped coriander.
  7. Season with salt and pepper and enjoy!
