A banging brunch when you only have a few ingredients to hand!
INGREDIENTS
- 2 Smoky Aubergine Blocks
- 1 Slice of Sourdough
- 1 Egg
- Handful of Feta
- Coriander
- Handful of Seeds
COOKING METHOD
- Heat up your Smoky Aubergine Blocks until piping hot.
- Toast your sourdough.
- Add a drizzle of oil to a nonstick pan over a medium heat.
- Crumble your feta into a small circle in the pan and then crack in your egg.
- Fry the egg until the yolk is as desired, and the deta has gone crispy around the edge.
- Top the toast with the Smoky Aubergine, fried egg, seeds and chopped coriander.
- Season with salt and pepper and enjoy!
