Bean and Cheese Enchiladas

A delicious veggie enchilada that can be scaled up to feed a crowd!
INGREDIENTS
  • 1 Tortilla Wrap
  • 2 Brazilian Beans Blocks
  • 1 Tbsp of Sour Cream
  • Grated Cheese
  • Splash of Water
  • Hot Sauce
  • Coriander
COOKING METHOD
  1. Preheat your oven to 180c.
  2. Heat up your Brazilian Beans Blocks until piping hot.
  3. Spread the sour cream into the centre of the wrap and top with the Beans. Reserve a teaspoon of the Beans.
  4. Wrap up the tortilla, add a splash of water to the remaining Beans and spread over the top of the wrap.
  5. Place in a baking tray and cover in melted cheese and hot sauce.
  6. Bake in the oven until the cheese is golden brown.
  7. Top with chopped coriander.
