Thai Flatbread

A great way to use up those last couple of Blocks of Thai Green - spread over a warm flatbread with toasted coconut and fresh cucumber.

INGREDIENTS
  • 2 Thai Green Blocks
  • 1 Chapati or Flatbread
  • Cucumber
  • Mint
  • Handful Desiccated Coconut
  • Red Chilli
COOKING METHOD
  1. Toast the coconut in a dry pan until golden brown and set aside.
  2. Heat up the Thai Green Blocks until piping hot.
  3. Warm up the flatbread in the oven or in a dry pan.
  4. Finely slice the red chilli and cucumber.
  5. Spread the Thai Green over the flatbread and top with your prepared garnishes, and finish with fresh mint leaves.
