A foolproof recipe for your own homemade flatbreads - easier than you might think!
INGREDIENTS
- 2 Blocks Chickpea Curry
- 125g Self-Raising Flour
- 70ml Water
- 1 Tbsp Olive Oil
- 1 Tbsp Mango Chutney
- 1 Tbsp Coconut Yoghurt (Plain or Soya will work too)
- Pinch Nigella Seeds (Or try Sesame)
- Handful Flaked Almonds
COOKING METHOD
- Heat 2 blocks of curry in a pan or microwave
- In a bowl, mix the flour, water and oil. Season with salt
- Dust your surface with flour and tip out the dough
- Knead until the dough becomes smooth and elastic
- Leave the dough to rest under a damp tea towel for up to 30 minutes
- Portion the dough into the right size for you and roll out each piece to 1cm thick
- Drizzle a tiny bit of oil over each side of the dough
- Place into a hot, dry frying pan and cook until one side is golden
- Flip and cook for a further 90 seconds until the bread puffs up
- Place the cooked flatbread on a plate. Pile up the curry into the middle of the bread
- Drizzle the mango chutney and yoghurt over the top
- Garnish with nigella seeds and flaked almonds.
