Curry On Homemade Flatbread

A foolproof recipe for your own homemade flatbreads - easier than you might think!

Ingredients

  • 2 Blocks Chickpea Curry
  • 125g Self-Raising Flour
  • 70ml Water
  • 1 Tbsp Olive Oil
  • 1 Tbsp Mango Chutney
  • 1 Tbsp Coconut Yoghurt (Plain Or Soya Will Work Too)
  • Pinch Nigella Seeds (Or Try Sesame)
  • Handful Flaked Almonds

How to Make It

1. Heat 2 blocks of curry in a pan or microwave.
2. In a bowl, mix the flour, water and oil. Season with salt.
3. Dust your surface with flour and tip out the dough.
4. Knead until the dough becomes smooth and elastic.
5. Leave the dough to rest under a damp tea towel for up to 30 minutes.
6. Portion the dough into the right size for you and roll out each piece to 1cm thick.
7. Drizzle a tiny bit of oil over each side of the dough.
8. Place into a hot, dry frying pan and cook until one side is golden.
9. Flip and cook for a further 90 seconds until the bread puffs up.
10. Place the cooked flatbread on a plate. Pile up the curry into the middle of the bread.
11. Drizzle the mango chutney and yoghurt over the top.
12. Garnish with nigella seeds and flaked almonds.
