Sausage & Egg Brunch Pitta

Spicy sausage and silky scrambled egg in a handheld brunch delight.
INGREDIENTS
  • 2 Sausage Arrabbiata Blocks
  • 2 Eggs
  • 1 Pitta
  • Handful of Spinach
  • Salt & Pepper
  • Chives
COOKING METHOD
  1. Crack 2 eggs into a bowl, season with salt and pepper and whisk together.
  2. Add a drizzle of oil or a knob of butter to a non-stick pan and add the eggs.
  3. Cook over a low-medium heat, stirring regularly until cooked to your preferred consistency.
  4. Meanwhile, heat up the Blocks until piping hot.
  5. Lightly toast the pitta and cut in half, width ways.
  6. Stuff the pitta with fresh spinach, the scrambled egg and the Sausage Arrabbiata.
  7. Top with chopped chives and black pepper.
